Asian-spiced Roasted Pork Belly

A beautifully moist and succulent Pork dish, full of the flavours of Asia.

1kg pork belly, bone out, skin on

½ cup (125ml) Chinese cooking wine
¼ cup (60ml) soy sauce
1 tbspn tamarind concentrate, (available from Asian specialty shops)
1 tbspn honey
½ tsp sesame oil
4cm piece fresh ginger (20g), chopped finely
3 cloves garlic, crushed
2 tsp five-spice powder
1 star anise
1 dried long red chilli
1 tsp Sichuan pepper, (available from Asian speciality shops)
3 cups (750ml) water
900g baby bok choy, halved lengthways

Baked Sticky Pork Ribs

16 pork spareribs

½ sml navel orange
125ml (1/2 cup) orange juice
1 lge clove garlic
½ onion chopped
1 tsp grated, fresh ginger
100 ml golden syrup
1 tsp Worcestershire sauce
4 drops Tabasco sauce
2 tbspn tomato paste (concentrated puree)
2 spring onions, green part only, shredded or finely diced.
